The Wolfenstein 3D Scenario Converter is a simple program that converts Wolf 3D for Macintosh scenarios into Apple IIgs format. It's not a map editor, but you can use a map editor on the Macintosh to create new maps, then convert them for use on the IIgs. You can also convert existing maps you can find available for download here and there on the Internet.
